Pure creamed, or "set" honey, perfect for spreading!  Honey naturally crystallizes. It's perfectly fine, but some people don't like the crunchy texture of crystallized honey.  By "seeding" liquid honey with very finely crystallized honey, we control the process to create a delicious, smooth spread. This is a great way to feed honey to children (over 12 months in age) as it's less likely to drip. We used to add freeze-dried powdered fruit to create different spreads but NJ's new cottage industry laws prohibit the practice unless one obtains a special license. What we've done instead is to make creamed honey from each of our varietal honeys so you can pick your favorite one!
